It is absolutely crucial that you drink a lot in Thailand—but I am not talking about boozing it up during your vacation. I am talking about good old naam, or water. The temperature is usually on the warm side, and it is easy to get dehydrated. Tap water is generally not safe to drink, but bottled water is for sale all over the city. Water served in restaurants is safe to drink. When eating something that you find too hot for your preference, your first reaction to ease the pain in your mouth will be to grab your glass of water and drink all you can. This is not the best solution. Instead, eat rice! Rice “absorbs” the fiery ingredients and does a better job of getting it “out” of your mouth while water just washes right over it.
