Some of the guidelines include: don’t use a steel brush on any of the cutting surfaces; don’t use harsh or abrasive detergents to disinfect the tabletop; don’t let food sit on top of the work area for long periods of time, which allows juices and moisture to damage the surface; and if you have purchased a butcher block style cart, don’t soak the block or let water seep into the wood. Also, you might consider wiping down the surface with a thin layer of mineral oil from time to time. As with all kitchen surfaces, be sure to clean the area well after working with raw meats such as fish, poultry, and beef.
